Red Cabbage Slaw


As a part of our homemade take out favorites we made this healthy alternative to traditional coleslaw for a night of barbeque.


Serves 6


Ingredients

6 cups red cabbage, slivered

2 large carrots, grated

1/2 cup raisins, halved

1 cup Greek yogurt

Juice of 1 lemon

Salt and pepper to taste


1. Add raisins and 1/2 cup raisins to bowl and microwave for one minute. Set aside to cool.

2. Mix together yogurt, lemon juice, salt and pepper.

3. Once raisins are cool drain and then press between paper towels to remove excess water.

4. Mix together yogurt mix, raisins, carrots, and cabbage. Serve chilled.

For a dairy free or vegan alternative use coconut milk yogurt such as So Delicious.


Below we've paired this slaw with crusted chicken, sautéed collard greens, cornbread, dill potato salad, and baked mac 'n cheese.
