Sautéed Garlicky Spinach

Looking for a super simple vegetable to complete your meal? Spinach is packed with nutrients, including vitamins K, A, and C, folate, and manganese. This is an especially great choice when you're short on time. Because spinach pairs well with so many meals (beans, fish, chicken, steak, eggs, etc.), I always like to keep fresh spinach on hand.

Serves 1

Time: 5 min

Ingredients:

2 cups fresh baby spinach

2 garlic cloves

1 tsp olive oil

Instructions:

  1. Peel and slice garlic cloves.

  2. Heat olive oil to medium heat in a non-stick sauté pan.

  3. Add garlic to the pan and use a rubber spatula to toss garlic constantly for 1-2 minutes, until garlic starts to brown.

  4. Quickly add the spinach and toss with the garlic. Continuously toss the spinach until wilted. Enjoy!
