
Baba ghanouj (or baba ganoush) is Middle Eastern and Mediterranean dish comprised of roasted eggplant, olive oil, lemon juice, spices, and sometimes tahini.
This lightened up version is perfect as a side by itself, as part of a mezze appetizer, or as a sauce for meat. We like to pair it with our Easy & Healthy Pita Chips
Serves 4
Ingredients
1 whole eggplant, roasted (650 g raw)
2 cloves of garlic, raw
2TB olive oil
1 lemon, juiced
Salt and pepper (to taste)
1. Remove the flesh from both sides of the roasted eggplant and place into the food processor or blender. I have also used a mixer for this but it doesn't turn out as smooth and creamy.

2. Add olive oil, juice from half of a lemon, and 1 clove of raw garlic. Blend and then taste - some people are more sensitive to raw garlic. Continue to add raw garlic and lemon juice to taste.
