Roasted Vegetables

Serves 4


Ingredients:


Choose your veggie:

40 Asparagus Spears

2 Broccolini bunches

4 cups Broccoli

4 cups Cauliflower


Seasonings - estimated amounts - it's best to stay light on the salt and olive oil, but other spices can be added more liberally:

0.5-2 T olive oil

1/4 tsp. salt

1/2 tsp. pepper

1/2 tsp. garlic powder

Instructions:

  1. Pre-heat oven to 400-450 degrees.

  2. Cut and prepare your veggies. Spread them evenly across your baking sheet. The more of the veggies that touches the baking sheet, the more roasting will occur.

  3. Season with salt, pepper, and/or garlic powder.

  4. Spread olive oil over veggies and mix. I prefer to mix with my hands, but a spatula also works.

  5. Place baking sheet in oven and set a timer for ~10 min. After 10 min, use a spatula to mix the veggies and return to the oven for remaining cook time - see below.


Estimated Total Cook Time:

Asparagus: 12-15 min

Broccolini: 15 min

Broccoli and/or Cauliflower: 20-25 min


Note: If roasting several types of veggies together, choose veggies that have similar cook times.
