Creamy Broccoli Soup

Serves 1


0.50 Tb olive oil

3 cloves of garlic, minced

1 medium onion (120g), chopped

2 cups (180g) raw broccoli, blended / food processed

3 scallions, chopped and separated

1.5 cup low-sodium chicken broth

1/2 cup low fat Greek yogurt

2 Tb light cream


1. Heat oil in medium saucepan. Sauté garlic, onion, and the white parts of the green onions.

2. Add the finely processed broccoli to the pan and mix to incorporate. Pour in chicken broth and bring to boil

3. Stir in yogurt and light cream. Sprinkle with green scallions to serve.
