Cauliflower puree

We first had a cauliflower puree at Keon's in Haverhill - a fantastic restaurant we highly recommend. Theirs was delightful as a treat but was a bit too heavy for us - you could tell there was a lot of butter in it! We've lightened it up here without sacrificing any flavor. This is a quick side dish which works as a vegetable or as a carb replacement!



Serves 4


Ingredients

1 head of cauliflower

1/3 c light cream

1 tsp Roasted Garlic Bouillon (can sub other bouillon)

Salt and pepper


1. Steam the cauliflower until very soft. To steam in microwave cut into small pieces and place in microwavable bowl with lid. Add scant amount of water and microwave for eight minutes.


2. Transfer cauliflower to food processor and add light cream and bouillon. Puree until very smooth. Salt and pepper to taste.
